Presto Yellow Pickled Milkfish






ingredients

2 tablespoons oil for sauteing
15 cloves (75 g) small red onion, peeled
3 cloves garlic, thinly sliced
2 bay leaves
2 stalks lemongrass, take the white part, crushed
Kaffir lime leaves 10
20 pieces of red chili intact
10 chive stems, wash
2 tail presto milkfish ( 300 g), cut into 5-6 parts, cooking, remove and drain
1 tsp salt
2 tablespoons granulated sugar
2 tsp tamarind water
200 ml of water
30 basil leaves

Seasonings, puree:

10 grains of red onion
4 cm turmeric, roasted
5 grains hazelnut, roasted

How to Make:

Heat oil, saute ground spices, onion, garlic, bay leaves, lemon grass, and lime leaves until fragrant. Enter the cayenne pepper. Saute until cooked.
Enter the chives and milk. Stamp salt and sugar. Sprinkle tamarind water. Add water and stir well. Allow the spices to infuse. Enter the basil and stir well.
Remove and serve.
